About this book series
Mycotoxins are secondary metabolites produced by different fungi when they infect food and
feed commodities at large during pre‐ and post‐harvest. Different types of mycotoxins like
aflatoxins, fumonicins, ochratoxins, trichothecenes, patulins etc. are widely been reported in
agricultural commodities and studied. Mycotoxin studies will include the survey of these
mycotoxin contaminations in different food and feed commodities across the globe. The
identification of different mycotoxins in food and feed commodities will provide scientific
support to various stake holders like scientists, food policy makers, and common public. Issues
related to the management of mycotoxins with respect to pre‐ and post‐harvest control will be
jointly addressed with the inputs from myotoxin research communities. Detoxification of
mycotoxins will help the food and feed industries to address the contamination issues and
detox
ify them before being sent to market for consumer consumption. Different advanceddetection techniques will pave a way for the food industrial applications to detect the
mycotoxins effectively, thereby preventing them entering the food chain. Toxicology issues with
different mycotoxins can be used by clinicians and veterinary surgeons in the treatment of
diseases with respect to mycotoxins.
