Aims and scope

Discover Food is a transdisciplinary, open access journal that provides a leading platform for the rapid dissemination of knowledge and advances included in innovative and high-impact original research articles, case studies, review papers, viewpoints and short communications covering the research and innovation that is taking place across the food sector. The journal welcomes basic, methodological and applied science that focuses on food science and technology, the global impact of the food sector, and nutrition.

Discover Food covers theoretical studies and basic science, as well as applied research relating to the food sector in areas such as chemistry and biology, food microbiology and process technologies. It also covers research as it relates to food waste recovery and usage, food security and sustainability, and the wider impact of and within the food industry, including research into supply chains and consumer behaviors. 

 The journal particularly welcomes papers that highlight technological innovation and disruptions taking place across the sector, such as Industry 4.0 (IoT, blockchain, AI, ICTs, etc) applications in the food supply chain, 3D printing, non-thermal post-harvest and processing technologies, nutrient bioavailability, bioaccessibility and bioactivities, as well as food waste recovery and research with implications for achieving the United Nations Sustainable Development Goals of zero hunger, responsible consumption and climate action.
