Brazilian Journal of Microbiology - Food Safety and Quality Section: minimum requirements to be considered for publication

1. Studies involving fermentation should be submitted to the Biotechnology and Industry Section.

2. Studies reporting on occurrence/prevalence of foodborne/spoilage/hygiene indicators bacteria require:

a) sampling size based on epidemiological data/analysis;

b) official and scientifically sound protocols for detection/enumeration.


3. Studies involving modeling of microbial growth require:

a) statistically designed models; 

b) clear response/association to food safety/quality;

c) validation of the proposed model in a food system.
 

4. Studies on microbial ecology and diversity require:

a) sampling size based on epidemiological data/analysis;

b) scientifically sound protocols.
 

5. Studies on microbial interactions require:

a) scientifically sound protocols;

b) description of proper controls;

c) adequate statistical analysis to demonstrate the discussed effects.
 

6. Studies on food processing require:

a) full description of the proposed process; 

b) description of proper controls;

c) validation of the proposed process in a food system.
 

7. Studies involving beneficial microbes require:

a) proper and reliable identification of isolates, based on molecular biology;

b) in deep characterization of the antimicrobial compounds, based on instrumental methods;

c) description of proper controls to demonstrate beneficial effects;

d) at least animal/cell models to demonstrate the claimed probiotic effects.
 

8. Investigation of foodborne outbreaks requires:

a) epidemiological data of the outbreak; 

b) chain of custody for the samples;

c) official and scientifically sound protocols for detection/enumeration of microorganisms in different samples, with analysis of food and clinical specimens, when possible.
