Plant Foods for Human Nutrition - Call for Papers: Advances in Starch Digestion for Improving Human Health

Plant Foods for Human Nutrition is delighted to announce this call for a special issue on the topic of Starch Digestion in the improvement of Human Health, guest edited by Dr. Luis Arturo Bello Pérez (National Polytechnic Institute, Mexico) and Dr. Juscelino Tovar (Lund University, Sweden).

Starch is the main polysaccharide in the human diet. This biopolymer is present in numerous plant foods and can be consumed directly after cooking (e.g., potato, rice, legumes, maize) or be isolated for its use as an ingredient. Starch-rich flours from those sources and others (amaranth, wheat, unripe fruits, etc.) can be mixed in formulations to produce bakery products, snacks, pasta, crackers, etc. With this in mind and aiming to promote novel foods with beneficial properties in terms of caloric intake control, glycemic regulation and reduction of cardiometabolic risk, the study of starch digestion in processed foods where interactions between the different constituents of the matrix occur, is a crucial challenge. In this regard, this Special Issue aims to collect original contributions on the advances of starch digestion with emphasis in slowly digestible and resistant starches to decrease the glycemic response and improving the human health. Special attention will also be paid to articles dealing with the nutritional functionality of starches and their preventative and therapeutic role against cardiometabolic diseases.

Deadline for manuscript submission: 31 October, 2024

All manuscripts will undergo QUAL’s peer review process and be handled by the Guest Editors.
