About this book

This reference work provides a comprehensive overview of bioactive compounds found in underutilized vegetables and legumes around the globe. It describes their pharmacological, biological and health effects in detail, and provides a strategic framework for further research and global development activities.

Using a consistent structure and divided into 9 parts based on the plant source, the book reviews bioactive compounds in various plant species. Each part opens with a leading article discussing the respective plant species.

This book is a valuable reference resource for plant biologists and biotechnologists, pharmacologists, pharmacists, food technologists, nutritionists and other health professions working in academia and industry.

About the authors

H. N. Murthy is a Professor at the Department of Botany at the Karnatak University, Dharwad, India. His main research interests include genetics and breeding; plant cell and organ cultures for the production of bioactive compounds; design of bioreactors for plant cells organ cultures; biosafety of biotechnologically derived bioactive compounds, genetic diversity; and conservation and utilization of neglected and underutilized fruits, vegetables and medicinal plants. He has published over 100 articles and more than 20 book chapters, and was the co-editor of the book “Production of Biomass and Bioactive Compounds Using Bioreactor Technology” (Springer, 2014). He has received several awards, including the Award for Research Publication from the Vision Group on Science and Technology, Government of Karnataka (2011), a “DAAD Fellowship” from the German Academic Exchange Service (2011), and a UGC-Mid Career Award from the University Grants Commission (2018).

Kee Yoeup Paek is emeritus professor at the Department of Horticulture, Chungbuk National University, Cheongju, Republic of Korea. He obtained his Ph. D. from Kyangpuk National University, Republic of Korea in 1984 and then joined Chungbuk National University, Cheongju, Republic of Korea as Professor, where he served the University in various capacities. His area of research is bioactive compounds of plants, their production by large scale cell and organ cultures for the use in pharmaceutical, cosmetic and food industries. Along with his research group he developed bioreactor technologies for the production of bioactive compounds from cell and organ cultures of many plant species. He guided 50 Ph. D. and 30 post-doctoral students. He has published 350 research papers, several book chapters, books and review papers. He has 15 US, Korea and Japanese patents to his credit. He has research collaborations with many countries.
