Professor Dr. Theodoros Varzakas is a Full Professor at the Department of Food Science and Technology, University of the Peloponnese, specializing in issues of food technology, food processing, food engineering, food quality and safety. Section Editor in Chief in Journal Foods section food security and sustainability, reviewer in many international journals. Has written more than 200 research papers and reviews and has presented more than 160 papers and posters in national and international conferences. He has written and edited 8 books in Greek, and six books in English published by CRC.

Professor Dr. rer. nat. Hesham A. El Enshasy  is the Director of Institute of Bioproduct Development (IBD), and professor of bioprocess engineering, school of Chemical and Energy Engineering, Universiti Teknologi Malaysia (UTM). He is the co-Chair for Food, Pharmaceutical& Bio-Engineering Division, Division 15A (Food), AIChE, USA. Prof. El Enshasy received his B.Sc. and M.Sc. in Microbiology (Ain Shams University, Egypt), Dr. rer. Nat. Industrial Biotechnology (TU Braunschweig, Germany 1998), M.Sc. Technology Management (UTM, Malaysia). He has five technology patents/trade secrets and more than 280 publications and keynote, plenary, and guest speaker in more than 80 international conferences in field of industrial biotechnology.
